Dairy-Free Scalloped Potatoes II PDF Print E-mail
This recipe comes from Mrsspeevs on Recipezaar.  Try making it vegan with vegetable broth and vegannaise!
3 tablespoons margarine
1/4 cup flour
1 3/4 cups chicken broth or water
1/4 cup mayonnaise
3/4 teaspoon salt
1/8 teaspoon white pepper
5 large potatoes
1 onion, chopped
 paprika
 
  1. Cook the margarine, flour, chicken broth, mayonnaise, salt and pepper, whisking constantly until bubbly and thick.
  2. Slice the potatoes paper thin. You can use a mandolin for this.
  3. Mix the potatoes and onions and place in a deep oven safe bowl.
  4. Pour the sauce over the potatoes.
  5. Sprinke with paprika.
  6. Bake at 350 degrees Fahrenehit for 1-1/2 hours.

First off I just wanted to say how happy I am to have found this website! I have recently become dairy free and it has been an adventure trying to adjust. This classic dish was fabulous and my family and I have decided to replace mashed potatoes this Christmas with this wonderful recipe! Thank You! :grin

We have been dairy-free since my ten year old son was diagnosed with a milk protein allergy last year....it has been quite a challenge to go dairy free. This website has been extremely helpful. I decided to try this recipe for our Christmas dinner tonight. The last time I made scalloped potatoes, I did it with silken tofu and soy milk and it didn't turn out very well.......I was ready for something new. This recipe is DELICIOUS!!! I would recommend this recipe for scalloped potatoes even if someone is not looking for dairy free!!! I use soy magarine and I threw in some bacon for an added flavor (and cut back on some of the salt) and it was absolutely fantastic. It is a keeper for our family. And we won't just be eating it for special occasions, either!
