Mashed Potatoes (Vegan, Gluten-Free) PDF Print E-mail

Recipe provided by Blue Diamond Growers, the makers of Almond Breeze...

Additional flavors can be stirred into this creamy potato dish.  Add roasted garlic puree, fresh chives, or fresh parsley.  Sprinkle lactose-free cheeses on top or stir into potatoes while mashing.

Ingredients:

  • 2 1/2 pounds Idaho potatoes, peeled, cubed
  • 1 to 1 1/8 cups Vanilla Almond Breeze®
  • Salt and pepper to taste

Preparation:

Boil potatoes until fork-tender.  Drain.  Mash with potato masher.  Stir in 3/4 cup Vanilla Almond Breeze®.  Adjust liquid for desired consistency.  Add more Vanilla Almond Breeze® if a creamier potato is desired.  Season with salt and pepper to taste.

Yield: 4-6 Servings

Prep time 10 minutes.  Cook time 20-30 minutes.
