Sweet Potato Casserole (Vegan, Gluten-Free, Nut-Free, Soy-Free) |

This recipe is from the Enjoy Life Food's test kitchens.
Sweet Potato Casserole Ingredients: -Sweet Potato Filling- 3 cups mashed sweet potatoes 1/2 cup brown sugar 1 tablespoon ground flax- rehydrate 1 tablespoon ground flax with 3 tablespoons water. Allow 10-15 minutes to rehydrate before use. 2 tablespoons oil (optional) 1/2 to 1 teaspoon cinnamon -Topping- 2/3 cup lightly crushed Enjoy Life Crispy Rice Cereal 1/3 cup oil or shortening, melted (Spectrum) 1/2 cup brown sugar 1/2 cup Pepitas or sunflower seeds Directions: 1) Mix topping ingredients and set aside. 2) Blend the Sweet Potato ingredients and place in a lightly greased casserole dish. Bake at 400°F for 35-40 minutes, or until heated throughout the casserole dish. 3) Add topping and bake for 10 more minutes. Quote this article on your site | Print
