Marshmallow-Free Rice Krispy Treats (Gluten-Free, Soy-Free) PDF Print E-mail

This creative recipe comes from the blog of "Needleroozer"

Ingredients:

  • 1/2 cup coconut butter
  • 1/2 cup sugar
  • 1/2 pound chopped dates
  • 1 beaten egg (may be able to omit or replace with liquid for vegan alternative)
  • 1 TBSP milk (rice, almond, or coconut milk)
  • 1 tsp vanilla
  • 1/2 cup chopped nuts (or dried blueberries, coconut, etc.)
  • 2 cups rice crispies type cereal
  • 1/2 tsp salt
  • choice of coating (nuts, bits, coconut, etc.)

Directions:

Cook butter, sugar and dates until boiling over low heat. Add beaten egg, milk, vanilla, and 1/2 tsp salt. Cook 2 minutes, cool. Add chopped nuts and cereal. Form into balls the size of a walnut. Makes 3 doz. Roll in nuts, coconut, melted chocolate or powdered sugar.

rice krispies use a barley malt flavoring  
and are not gluten free

This is true, Kellogg's brand does contain gluten. Make sure you select a brand of "rice crispies" that is gluten-free, such as Barbara's or Nature's Path. Both brands are available throughout Canada in the US, and I have even seen them in my local conventional grocer lately. :)
