Sugar-Free Melon Popsicles

Serves: 4 melon popsicles
- 3 cups chopped melon (honeydew, cantaloupe or watermelon)
- 1 teaspoon lime juice or lemon juice
- Put the melon and lime or lemon juice in your blender and blend until very smooth.
- Divide mixture between ice pop molds or 4 paper cups, leaving a little room at the top for expansion.
- If using cups, place them in a baking dish for stability and insert a wooden stick in each cup.
- Freeze for 30 minutes, and if using paper cups, straighten the sticks if they have moved off center.
- Freeze for 1 more hour, or until solid.
