Fragrant Quinoa and Lentils

Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon dried thyme
  • 1 (15oz) can lentils, drained
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground cinnamon
  • ½ cup dried currants
  • salt and pepper (to taste)
Instructions
  1. Bring water to a boil and add quinoa, olive oil, salt and thyme.
  2. Cover and simmer for 8-12 minutes until quinoa has absorbed all the liquid.
  3. Remove from heat and allow to cool.
  4. In a large bowl, combine quinoa, lentils and spices.
  5. Stir in dried currants and serve.
