For me, brownie bliss involves a dense, chocolaty, nut-studded, just-out-of-the-oven companion to dairy-free ice cream. And this recipe truly delivers.

Ingredients
  • 1½ cups all-purpose flour
  • ¾ cup sugar
  • ⅔ cup packed brown sugar
  • ½ cup coarsely chopped walnuts (can sub other nuts or omit for nut-free)
  • ½ cup dairy-free chocolate chips
  • ⅓ cup cocoa powder
  • ¼ teaspoon salt
  • 2 eggs
  • ⅔ cup oil
  • 2 teaspoons vanilla extract
Instructions
  1. Preheat your oven to 350°F and grease an 8-inch square baking pan.
  2. In a bowl, whisk together the flour, sugar, brown sugar, nuts, chocolate chips, cocoa powder, and salt.
  3. In a medium bowl, whisk together the eggs, oil, and vanilla. Add the wet ingredients to the dry and stir to combine.
  4. Evenly spread the batter into your prepared baking pan.
  5. Bake for 40 minutes.
  6. Cut and serve immediately with dairy-free ice cream.
Notes
Storage: A pan of these brownie bars rarely lasts more than 24 hours in my house. But leftovers can be stored like most home-baked brownies - covered at room temperature for up to 2 days or so. For longer keeping, individually wrap the brownies and freeze them. Let them defrost at room temperature, or you can use the microwave for a warm, melty brownie.
