Creamy Quinoa Tomato Soup

  • 3 tablespoons quick quinoa powder
  • 2 cups boiling water
  • 5 roma tomatoes
  • Fresh basil
Instructions
  1. Add Quick Quinoa Powder and 2 cups boiling water to a food processor. Pulse, then let it rest for two minutes.
  2. Add Roma tomatoes and fresh baby basil. Blend until smooth.
  3. Top with a slice of tomato and sprig of basil if desired.
  4. Add salt to taste.
  5. Enjoy!
