If you like balsamic vinegar, then this easy entree is a must make. It has a quick, savory marinade that's cooked down to create a drizzly sauce for the whole meal. Please note that the Prep time is hands-on time only. Allowing some time for the chicken to marinate adds to the flavor of this dish. See the post above for serving ideas.

Ingredients
  • 1 pound chicken breasts
  • ¼ cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon crushed garlic (about 2 garlic cloves)
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon olive oil
Instructions
  1. Spread the chicken out in a baking dish.
  2. In a small bowl, whisk together the vinegar, mustard, garlic, thyme, salt, and pepper.
  3. Pour the marinade over the chicken and turn the pieces to coat. Cover and refrigerate the chicken with marinade for 30 minutes to 4 hours.
  4. When ready to cook, heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 3 minutes on each side. Add the marinade, and continue to cook for another 5 minutes per side, or until the chicken is cooked through and the marinade begins to thicken.
  5. Remove the chicken to plates. Serve with vegetables (see serving options in post above), and drizzle each meal with the remaining cooked marinade.
Notes
Cooking Tip: For more even cooking, place the chicken breasts between two pieces of plastic wrap and pound the thick portions with a meat mallet until the chicken breasts have a uniform thickness. This will reduce the cook time slightly, and helps to ensure the chicken is evenly cooked and fully cooked through.

Chicken Thigh Option: You can substitute boneless skinless chicken thighs for the chicken breasts, if preferred.
