Dairy-Free Five-Spice Roasted Carrots

A touch of honey (or other sweetener) and roasting pair to coax out the natural sweetness of carrots. This side pairs well with an array of proteins, including beef, pork, chicken, and tofu.

Ingredients
  • 12 ounces carrots, thickly sliced or baby carrots
  • 1 tablespoon oil
  • 1 teaspoon honey (see Vegan Option below)
  • ½ teaspoon Chinese five-spice powder
  • ¼ teaspoon salt
Instructions
  1. Preheat your oven to 450ºF.
  2. Place the carrots in a large baking dish or on a baking sheet lined with parchment paper.
  3. Add the oil, honey, 5-spice powder, and salt to the carrots, and stir until evenly coated. Spread the carrots out into a single layer.
  4. Roast the carrots for 15 minutes.
  5. Stir the carrots, and then roast them for another 10 to 15 minutes, or until they are tender and begin to brown and caramelize.
Notes
Vegan Option: You can substitute maple syrup or brown sugar for the honey. Agave nectar could also be used.
