This no fuss recipe makes crisp, delicious peanut brittle in minutes!

Ingredients
  • 1 cup granulated sugar
  • ½ cup corn syrup
  • 1 cup dry-roasted peanuts
  • 1 tablespoon dairy-free buttery spread or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
Instructions
  1. Lightly grease a 13x9-inch flexible rimmed baking sheet.
  2. Stir the sugar and corn syrup together in a 2-quart microwave-safe bowl.
  3. Cook for 4 minutes on high in the microwave.
  4. Stir in the peanuts and cook for 4 more minutes on high in the microwave.
  5. Whisk in the buttery spread and vanilla and cook for 2 more minutes on high. The brittle should be a golden in color.
  6. Stir in the baking soda and quickly spread the mixture in a thin layer on the prepared sheet. Let cool completely.
  7. Once completely cool, flex the pan to release the brittle, then break the brittle into pieces.
