Combine the garlic powder, chili powder, black pepper, smoked paprika, salt and cinnamon in small bowl, stirring well.
Rub the pork loin with olive oil, and then rub it with spice mixture, making sure to coat every surface.
Place the pork loin in a large resealable plastic bag and refrigerate for 2 hours or overnight.
Before baking, roll the pork loin in the chopped honey roasted peanuts, pressing firmly to make sure the peanuts stick.
Bake at 400°F for 25 minutes or until a thermometer registers 140°F. Remove from the oven and let the meat stand for 5 minutes, or until the internal temperature registers 145°F.
