This sweet treat is reminiscent of chocolate chip cookie bars, but healthier!

Ingredients
  • ⅓ cup plain dairy-free yogurt
  • ⅓ cup coconut sugar or brown sugar
  • ¼ cup agave nectar
  • ¼ cup plain or unsweetened almond milk (or your choice of milk beverage)
  • 2 tablespoons oil
  • 1 tablespoons vanilla extract
  • 1 cup quinoa flour
  • ½ cup quinoa flakes (can sub quick oats)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup dairy-free chocolate chips and/or other add-ins (like chopped nuts, coconut, raisins, dried fruit, etc)
Instructions
  1. Preheat your oven to 350ºF and grease an 8-inch square baking pan or line it with parchment paper.
  2. In a large mixing bowl, stir together the yogurt, sugar, agave, milk beverage, oil, and vanilla until combined.
  3. Add the flour, quinoa flakes, baking powder, and salt to the liquid mixture and stir to combine.
  4. Stir in any add-ins.
  5. Spread the batter into your prepared baking pan.
  6. Bake for 15 to 20 minutes or until it springs back lightly when pressed.
  7. Let cool completely before cutting into thirds each way.
