Quinoa Bars (Gluten-Free & Vegan)

- ⅓ cup plain dairy-free yogurt
- ⅓ cup coconut sugar or brown sugar
- ¼ cup agave nectar
- ¼ cup plain or unsweetened almond milk (or your choice of milk beverage)
- 2 tablespoons oil
- 1 tablespoons vanilla extract
- 1 cup quinoa flour
- ½ cup quinoa flakes (can sub quick oats)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup dairy-free chocolate chips and/or other add-ins (like chopped nuts, coconut, raisins, dried fruit, etc)
- Preheat your oven to 350ºF and grease an 8-inch square baking pan or line it with parchment paper.
- In a large mixing bowl, stir together the yogurt, sugar, agave, milk beverage, oil, and vanilla until combined.
- Add the flour, quinoa flakes, baking powder, and salt to the liquid mixture and stir to combine.
- Stir in any add-ins.
- Spread the batter into your prepared baking pan.
- Bake for 15 to 20 minutes or until it springs back lightly when pressed.
- Let cool completely before cutting into thirds each way.
