Dairy-Free Lime Bars

Serves: 16 bars
- 1 cup all-purpose flour
- 1 teaspoon kosher salt (or half as much table salt)
- ¼ cup powdered sugar
- ½ cup dairy-free margarine (Sarah uses Fleischmann's unsalted margarine), softened
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- Grated zest of 2 limes
- Juice of two limes, ½ to ⅔ cup
- 2 eggs, beaten
- Powdered sugar for topping
- Heat the oven to 350ºF.
- In a mixer, beat the margarine into the flour, salt, and sugar and mix until it forms a bowlful of sandy crumbs.
- Pat this mixture firmly into a well-greased 8x8-inch pan and bake for 20 minutes, until deeply golden.
- Meanwhile, whisk together the sugar, flour, and baking powder, then whisk in the lime juice and zest and the eggs.
- Whisk until smooth, then pour over the partially-baked crust and bake for 25 minutes.
- Cool, then sift powdered sugar over the top and cut into 16 squares.
