Curry A La King

Serves: 4 servings
- 2 tablespoon vegetable shortening
- 2 tablespoon flour
- 2 cups unsweetened milk alternative (such as So Delicious Unsweetened Coconut Milk Beverage)
- Salt & pepper, to taste
- 1 lb extra firm tofu, cut in small pieces
- 1 onion, finely chopped
- 1 teaspoon minced ginger
- 2 minced garlic cloves
- 1 tablespoon curry powder
- 1 teaspoon garlic chili sauce
- Raisins and peanuts (optional), to garnish
- To prepare the white sauce, melt the shortening in a small pan over low heat, add flour and stir until smooth and bubbly.
- Slowly add milk while stirring. Cook until thickened.
- Season with salt and pepper, to taste.
- In a new pan brown tofu, onion, ginger and garlic in a little olive oil over medium heat.
- Add curry powder, chili sauce, salt and pepper, to taste.
- Add white sauce.
- Stir until well mixed and heated through.
- Serve over rice.
- If desired, top each serving with raisins and peanuts.
