Berry Coulis Parfait

- ¼ cup raspberries or strawberries
- 2 tablespoons honey, or to taste
- 3 tablespoons water
- ¼ cup granola with nuts
- 1 cup vanilla dairy-free coconut milk yogurt
- ¼ cup blueberries
- Cook red berries with water and honey on high heat for 1-2 min, mashing with a fork or hand blender.
- Meanwhile layer granola then yogurt followed by blueberries.
- Spoon the raspberry puree over the blueberries and top with granola.
