This fresh take on homemade barbecue sauce is easy to make, and it tastes delicious. We've included a quick recipe for grilled chicken or tofu in the notes, since they both pair well with this sauce.
Author: Fresh from Florida Kids
Recipe type: Sauce
Cuisine: American
Serves: 4 to 6 servings
Ingredients
Blueberry Barbecue Sauce
2 teaspoons oil
¼ cup minced onion
½ cup ketchup
¼ cup vinegar
3 tablespoons light brown sugar
1 teaspoon Dijon mustard
2 cups blueberries
Salt, to taste
Fresh ground pepper, to taste
Instructions
Heat the oil in non-reactive saucepan over medium heat. Add the onion and saute until almost translucent, about 3 minutes. Add the ketchup, vinegar, sugar, and mustard and whisk to combine. Bring the ingredients to a simmer.
Add the blueberries. Continue to simmer over low heat, stirring occasionally until thickened, about 10 minutes.
Puree the sauce in a blender or food processor and puree until smooth. Optionally pass through a fine mesh sieve if a smoother consistency is desired.
Season with salt and pepper.
Notes
Grilled Chicken or Tofu: Preheat the grill to medium-high heat. Lightly season both sides of 4 (6-ounce) chicken breasts or 4 tofu "steaks" with salt and pepper, and brush them with a little oil. Grill for 3 to 4 minutes on each side or until golden, and the internal temperature reaches 165°F if prepared chicken. Let the meat or tofu rest for 5 minutes before serving with the Blueberry Barbecue Sauce.
