Blueberry-Banana Baked Oatmeal Cups

Ingredients
  • 2 ripe bananas, mashed
  • 1 egg
  • 1 cup unsweetened dairy-free milk beverage
  • ¼ cup brown sugar
  • 2 cups oats (certified gluten-free, if needed)
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup blueberries
Instructions
  1. Preheat oven to 350ºF. Line a cupcake pan with paper liners.
  2. In a large bowl, combine bananas, egg, almond milk, brown sugar, and mix together.
  3. Add dry oats, baking soda, cinnamon, salt and blueberries and mix until combined.
  4. Using an ice cream scoop, divide the mixture among the cups.
  5. Bake in the oven for 25-30 minutes or until golden on top.
Notes
Tip: These baked oatmeal cups are delicious warm out of the oven, room temperature, or even cold. They are a great, healthy, and fast breakfast for the week or even as a snack! If stored in the refrigerator, heat up in the microwave for 15 seconds.
