1½ cups unsweetened dairy-free creamer or dairy-free half and half
¼ teaspoon salt
½ teaspoon black pepper
4 dairy-free waffles, frozen or homemade
4 fried eggs
Instructions
Brown sausage in large sauté pan. Do not drain grease.
Whisk in flour. Continue cooking and stir for 1 minute.
Whisk in coconut creamer, salt and pepper, adjusting to taste. Just before mixture boils, lower heat to medium-low (do not boil.). Cook for 3 4 minutes.
Serve over waffles topped with fried eggs.
Notes
You may add ½ small chopped onion to sausage if desired.
