Peaches and Cream Waffle Bites
- 1 whole-wheat or gluten-free frozen waffle (both Van's and Nature's Path offer great options)
- 2 tablespoons dairy-free cream cheese alternative (such as Daiya) or coconut cream*
- ⅛ teaspoon ground cinnamon
- ½ cup jarred sliced peaches, drained and diced
- 2 teaspoons chopped walnuts, toasted
- Toast the waffle and cut it into quarters.
- In a small bowl, combine the cream cheese alternative or coconut cream and cinnamon. Spread it over the waffle bites.
- Top each bite with the diced peaches and sprinkle with walnuts.
