Asian Coleslaw with Spicy Peanut Dressing

This simple recipe has contrasting flavors and textures for a salad that can double as a meal. Optionally add chickpeas, edamame, chicken, or tofu for more protein.

Ingredients
  • 1 11-ounce can mandarin oranges
  • ¼ cup Asian sesame dressing (like Annie's)
  • 2 tablespoons creamy peanut butter
  • ¼ teaspoon crushed red pepper
  • ½ cup coarsely chopped dry roasted peanuts
  • 1 16-ounce bag tri-color slaw mix
  • Chow mein noodles, for topping
Instructions
  1. Drain the juice from the mandarin oranges into a mixing bowl and reserve the oranges.
  2. Add the dressing, peanut butter and red pepper to the mixing bowl, and whisk until well-blended.
  3. Add the peanuts, oranges and coleslaw mix, and toss until thoroughly coated.
  4. Garnish the slaw with chow mein noodles before serving.
