Everyday Bacon Lentil Soup

You can swap in leftover cooked potatoes, carrots or green beans if available in your refrigerator. But this recipe can be made any day with convenient cans on hand.

Ingredients
  • 2 slices bacon, diced (see post above for vegan option)
  • 1 medium red onion, diced
  • 1 large garlic clove, minced
  • ½ teaspoon ground cumin
  • 1 15-ounce can lentils, drained
  • 1 14-ounce can vegetable broth
  • 1 14-ounce can diced new potatoes, drained
  • 1 14-ounce can sliced carrots, drained
  • 1 8-ounce can cut green beans, drained
Instructions
  1. Cook the bacon in a medium saucepan over medium-high heat until crisp, about 5 minutes. Remove with a slotted spoon to paper towels to drain.
  2. Reduce the heat to medium. Cook the onion and garlic in the bacon in the bacon drippings until tender, about 5 minutes, stirring occasionally.
  3. Add the cumin and saute for 1 minute.
  4. Add the lentils, broth, potatoes, carrots and green beans and bring the soup to a boil. Reduce the heat to low and simmer uncovered for 10 minutes, stirring occasionally.
  5. Ladle the soup into two bowls and top with the bacon to serve.
