Thai is one of top three favorite cuisines. I love the complexity, the flavors that pop from the food, the care that goes into it, and just the fun factor of it. The dishes, whether they are curries or satay, are always ones that get people talking and even after I am full, I find myself sneaking a few more bites. While many people are familiar with some of what have become standard Thai dishes popularized in restaurants, we wanted to go beyond that in this issue and showcase the diversity of real Thai cuisine.
