I was in the mood for chocolate hard core last Sunday. It had been a while since I had made any brownies, chocolate cakes, cookies, anything … I had been busy with working out, work, and life in general. But when my sister came over with her daughter on Sunday morning to clean my grandmother's house it fueled my need for chocolate. My twin and I share a love of baking sweets and goodies. We like to nibble and bake while we gossip and laugh. However, we do like our sweets a little on the healthier side.
I, for obvious reasons, prefer my desserts wheat and dairy free, while my sister uses whole wheat flour, applesauce, oils, and egg whites in her baking. So I pulled out the Bob's Red Mill Brownie Mix. I was nervous, especially because I used their Chocolate Cake mix before and was not impressed.
It was fairly simple to make; the usual suspects went in the bowl…egg, water, vanilla. I started mixing it up and here is where I got really nervous. The batter was TOUGH. I was mixing away, but it was really, really thick and sticking to the beaters. I reviewed the amounts of liquids I put in – 3/4 cup of warm water as directed, but was it not enough??? Continuing to trust the package, I got out my 9×13 baking pan, greased it up and crossed my fingers while I attempted to pour the mix in the bowl. This was a no-go. This batter was still tough and thick. I tried spreading it around with a spoon. Nope. I ended up putting it into an 8×8 pan and hoped it wouldn't take forever to cook. Which it did. Sigh.Instead of 20-25, it was more like 35. I was terrified the taste would end up like the prep. Lousy!
Happily I was wrong! I loved the taste. They had an excellent dark chocolate flavor that popped right out at me. I love rich chocolate and this was it. Perfect! My two sisters each had one, my sister's boyfriend had one, and the kids had one each. I wrapped two up to take my Offical Taste Tester (who loved them), and I had two. After all, I did make them! Due to the small pan size they were bigger in height and did not produce 16 brownies like the box said it would, but I was happy with the taste, happy everyone loved them, and happy I baked them anyway despite the unusual preparation.
