By Barb Nicoletti – One of the challenges I have faced with two small children with food allergies is what to feed them for breakfast. As both possess allergies to dairy, eggs, nuts, peanuts and a whole list of other things, there is not much in the pre-made area available to us. Granted, lunch and dinner are rarely an issue, but I have struggled with foods for them for breakfast.
After a long search on the Internet, which seemed like forever, I came across Van’s Waffles. These waffles were my answer to a quick and easy breakfast for a family on the go. Luckily, after several trips to different stores, I was able to locate them at Wild Oats. With a line of organic, hearty oats, wheat free and a whole list of others, not only were they reasonably inexpensive, but the wheat free waffles were also vegan. I believe the hearty oat waffles are also vegan.
So, I purchased the mini wheat free vegan waffles and a bottle of syrup, and headed home for a quick trial. Five minutes in the toaster and breakfast was a success. I had hit the jackpot for a quick and easy meal! Now I keep an extra supply on hand so that I do not have to search high and low to find them on short notice. Add some homemade whipped “cream” and fresh fruit to the mix, and you will have a great brunch time treat, snack or even dinner.
Now the only downfall to these waffles, is that Van's does not use dedicated equipment for any line. They do have some products that contain dairy and eggs, and maybe some seeds if you read all of the ingredients on every box. I initially contacted the company before purchasing them to see what their cleaning process was to ensure that their products were safe for our family.
