Oh how I’ve longed for a good quality dairy-free white chocolate. It’s tricky to make at home, and the very few brands that do exist are full of junky ingredients. Enter Rescue Chocolate Like White Chocolate Bars …
Don’t get me wrong, I adore dark and semi-sweet chocolate. But it’s the naturally dairy-free cocoa butter (yes, it’s from a plant, not a cow!) that I crave most, not the bitter cacao. So I was excited to sample the Rescue Chocolate Like White Chocolate Bars, despite their notable departure from what we usually visualize with white chocolate.
Each of the flavors is rich in cacao butter, but the extreme creamy goodness comes from the addition of nuts. Here are the ingredients in the base white chocolate of Rescue Chocolate Like White Bars:
Cacao butter, cashews, cane sugar, chia seeds, Brazil nuts, almonds, vanilla bean powder, sea salt.
The Like White chocolate base is relatively firm yet softer than your average white chocolate. It also has a very strong nut butter influence, both in flavor and consistency. It’s smooth and quite scrumptious, but possesses an earthy vibe that’s much less sweet than your typical brand. Definitely a treat, but a healthier one with fiber, protein and even a little calcium!
Tasting Notes for Rescue Chocolate Like White
Though they’re all poured with the same nutty, buttery chocolate, each of the Rescue Chocolate Like White bars has it’s own special additions:
Crunch
Oh my goodness, I love the quinoa crunch! It’s like little rice crispies – still light and crunchy, but with a touch more substance and a smaller size.
Fancy Fruit
This one really hit on a craving for me. It reminds me SO much of yogurt covered raisins, but without the dairy side effects! Though the name gives it a “multi-fruit” sense, raisins are the only addition here, but I’m fine with that.
Cookies ‘n Cream
The ingredients only list the addition of “cookies and cream”, with only nuts listed as an allergen, so be sure to check with the company if gluten is an issue for you. Besides the incomplete labeling, it’s hard not to like this classic combination, which is definitely the most dessert-like of the bunch.01
Does it hold up in baking? I’m not sure … we devoured every last square of these Rescure Chocolate Like White Bars before I even thought of this. My initial guess is no, as they lack a good emulsifier. But if the chia and nuts have any emulsifying power when heated, it’s possible since they seem to be present in notable quantities.
