In case you hadn’t noticed, dairy-free and vegan frozen ravioli isn’t a common occurrence.
Those pasta pillows are typically stuffed with cheese, but Rising Moon goes out of their way to create not one, but FIVE varieties of vegan frozen ravioli, plus a bonus gnocchi! Thus far, I’ve only sampled one of the vegan frozen ravioli flavors, Creamy Artichoke and Olive, but was quite impressed with what I tasted. Just a drizzle of olive oil and a sprinkle of sea salt was all that was needed to let this vegan frozen ravioli shine.
The filling was quite flavorful, though I wouldn’t have guessed artichoke had I not known the variety already. It almost tasted like a quality mushroom ravioli. That said, I thought the filling to pasta ratio was a touch skimpy. The thick layers took much longer to cook through than the package indicated (12 minutes to get to al dente vs the 8 minutes stated on the instructions) and made for more of a dense pasta experience than I expected. Still quite good, but for the price, I like a bit more rich filling.
