Toby’s Tofu Pâté – Lemon Dill Spread & Dip (DISCONTINUED)


This tempting dip and spread is one of the most versatile products I have come across yet.  All of the Toby’s flavors are delicious, but for some reason the ideas really began flowing when we picked up a tub of the Lemon Dill variety.

It is very similar in both texture and flavor to the other Toby’s varieties, but the light lemon and dill persuasion seemed to add a new dimension to either the pâté or our creativity.  It was excellent as a substitute for cream cheese on our lunch of lox and bagels.  We also trialed it as a carrot dip, mixed into hot white rice, and as the creamy addition to coleslaw.  All were delicious.

Yet, the most intriguing suggestion I have found comes from Jennifer McCann, the author of “Vegan Lunch Box,” and a blog by the same name.  She filled jumbo pasta shells with the Lemon Dill Pâté (rather than ricotta), and garnished it with a fresh sprig of dill.  I could only imagine this excellent dish, as by the time I found her suggestion our tub of Toby’s was gone!
