Summary:

This brand once had a huge selection of flavors, but sadly, they've discontinued most. What's left are some unique varieties that aren't quite for my tastes, since I'm not a fan of coffee or lavender. That said, these big thick cookies have a flavor-filled tender bite. And despite the lack gluten and eggs, they aren't the least bit crumbly. However, the texture does have that telltale gluten-free mouth-feel from rice flour.

One word sums up how I felt when a beautiful box from The Inspired Cookie arrived …

Yet this wasn’t the only emotion I was able to enjoy from these gift-worthy gluten-free goodies … Comfort, Warmth, Radiance, Tranquility, Grace, Enlightenment, Rejuvenation, and finally Bliss were all a part of the Inspired experience.

I was thoroughly impressed by the delightful packaging, a tall rectangular canister that held over a dozen of these sizable, thick, and soft cookies. Each variety was completely vegan (dairy-free and egg-free) and gluten-free.

The Inspired Cookies - Vegan, Dairy-Free, and Gluten-FreeOf course, they were delicious too, and enjoyed by our entire household, gluten-free or not. The unique texture of each cookie did give away its gluten-free nature. They definitely had the crumb of a rice flour-based treat. However, they were completely cohesive and tender – quite the feat for a vegan and gluten-free goodies.

But what initially excited me most were were the unique flavor offerings. Unfortunately, since our initial review (I’m updating this in 2016), many of The Inspired Cookie flavors have been discontinued. Nonetheless, they have added Brownies and a Clarity Cookie (peppermint chocolate chunk), which we have sampled. Of the remaining flavors, we sampled these:

Enlightenment (Espresso Lemon Chocolate Chunk):  I am not a coffee fan, so this cookie didn’t wow me as much as the others, but it won’t let down your average mocha fan. A calm infusion of espresso filled the cookie base with caffeinated warmth, while the semi-sweet chocolate chunks added that coffee shop indulgence.

Tranquility (Lemon Lavender):  Mmmm, I can’t say that lavender and lemon are two flavors I often run across in a cookie, but they are certainly sweet harmony in this one. Not too sweet, but definitely a cookie. I can see where the name Tranquility comes from for this pleasant cookie; it put a big, content smile on my face.
