We have not yet trialed the Urban Cheesecraft Dairy-Free Mozzarella & Ricotta Kit, so this is an informational review post only. I cannot yet give it a rating or personally weigh in on the taste, texture, etc, but if you have tried it, please do leave a comment with your own review!

You may have spotted Urban Cheesecraft in my holiday food gift guide, but I wanted to ensure this popular dairy free cheese kit had a more permanent home in our product reviews / listings. The artisan behind Urban Cheesecraft is Claudia Lucero – a woman who takes great pride in what she creates, and it shows in the thousands of 5-star reviews her products receive. The bulk of what she makes is for whipping up your own dairy-based cheese, but recently she decided to come up with a dairy-free kit, and it has been a big hit!

The Urban Cheesecraft Dairy Free Mozzarella & Ricotta Kit includes these carefully selected and tested supplies (enough to make 5 batches of dairy-free mozzarella and at least 15 batches of ricotta):

  • Instruction/Recipe Handbooks and Unlimited Email Support
  • Fine Mesh, 100% Cotton Cheesecloth
  • Gluten-free Tapioca Flour (cassava root)
  • Quick Gelling Agar Powder (kelp – no carageenan!)
  • Pure, Non-Iodized Flake Salt
  • Gluten-Free, Non-GMO Citric Acid

Notes from Claudia:

I thought it might work particularly well for you and your readers because I tested and offer a myriad of substitution ideas. For example, I suggest blanched almond meal or soaked cashews for the ideal mozzarella like texture and flavor (coming from a real mozzarella perspective) but, if people are allergic or sensitive to those they can also try white beans, macadamia nuts, walnuts and even zuchinni. I give a bunch of other suggestions for customizing.

You heat and stir the silky mix in a saucepan for about five minutes and it transforms into luscious melty mozzarella. You can use it immediate, shape it into balls in cold water or it will take the shape of whatever ramekin or bowl you use. Another 10 minutes. You can eat beautiful dairy free mozzarella in minutes. The ricotta is even easier!
