Serves: 6 servings
  • 8 oz low-fat silken tofu
  • ½ c vanilla soy milk
  • 1 Tbs agave nectar
  • ½ tsp ground cinnamon
  • Pinch nutmeg
  • Vegetable oil cooking spray
  • 12 slices whole wheat bread
  1. Puree the tofu, soy milk, agave nectar, cinnamon, and nutmeg in a blender.
  2. Pour mixture into a pie plate.
  3. Coat a large skillet with cooking spray.
  4. Dip each slice of bread into the tofu mixture and cook over medium heat for about three minutes per side or until golden brown.
Special note: If you are Type 2 diabetic and have never tried agave nectar, please do. This natural sweetener comes from a succulent that is similar to aloe vera and is a great substitute for sugar in most recipes.
