Happy Cinco de Mayo! To top this festive celebration, or at least some Mexican-inspired salads, I have an amazing coconut lime dressing recipe from Erin Bosdet of Simply Dish.
Both healthy and tasty, this coconut lime dressing gets its creamy consistency from a blend of ripe avocado, coconut oil, and unsweetened coconut milk beverage. Just be sure that all of your ingredients are brought to room temperature before blending. Coconut oil solidifies when cooled even a little, so it will firm up and leave little pieces in your creamy concoction if any ingredients are even a little chilled.
