Vegan Bananas Foster Ice Cream

This bananas foster ice cream was a Runner-Up Recipe from the Galaxy Foods Dairy-Free Ice Cream Contest. The entrants used Galaxy’s vegan cream cheese alternative to create a vegan ice cream recipe.

Bananas Foster Vegan Ice Cream

The recipe is quick to prepare, but allow for several hours of chilling time!

Ingredients

    Ice Cream:
  • 3 ripe bananas smashed
  • 2 cups almond or coconut milk alternative
  • 8 oz plain Galaxy vegan cream cheese alternative, room temperature
  • 1 cup unrefined sugar
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut rum (optional)
  • Unsweetened coconut flakes for garnish
  • Vegan Caramel Sauce:
  • 1/2 cup unrefined sugar
  • 1/4 cup almond or coconut milk alternative
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Instructions

    Ice Cream:
  1. Place coconut oil and sugar in a sauce pan and cook over medium heat until sugar is melted, about 2 minutes.
  2. Add the smashed bananas and vegan cream cheese. Mix together and cook for another 3 minutes.
  3. Mix in the coconut rum. Remove from heat and let the banana mixture cool for about 20 minutes.
  4. Once cooled, combine the banana mixture and milk blend in a large bowl.
  5. Mix well and pour the mixture into the ice cream maker. Ice cream should be ready in about 20 minutes, depending on your ice cream maker.

  8. Mix the sugar and milk in a sauce pan and bring to a boil over medium heat. Cook until mixture gets thick.
  9. Remove from heat and mix in the coconut oil and vanilla extract.
