A quick Mediterranean-inspired marinade escalates these steak skewers to new home cook heights. Since the ingredients used are fresh and non-processed, this recipe is naturally dairy-free, gluten-free, soy-free, and generally food allergy-friendly.

- Clean and preheat your grill on high.
- Lightly oil everything before putting it on the grill. This helps the searing process and prevents sticking.
- Season food before grilling.
- Sear the outside of steaks when grilling; this helps with the flavor and juiciness.
- Use tongs or a spatula to turn meat on the grill; a fork can damage the meat.
- Cover your grill as much as possible during the grilling process to lock in the grilled flavor and help prevent flame flare-ups.
- Keep a spray bottle with water handy to douse any unexpected flare-ups.
- Use the 60/40 grilling method to ensure even cooking. Grill for 60 percent of the time on the first side, then grill 40 percent of the time after turning over the food.
- Place cooked food on a clean plate. Never place cooked food on the plate you used to transport the raw food to the grill without thoroughly washing it first.
- Allow foods to “rest” for 5 minutes between cooking and eating. This will help them retain moisture when you cut into them.
- ½ cup extra virgin olive oil
- ¼ cup California chardonnay wine
- ¼ cup fresh squeezed lemon juice
- 2 tablespoons fresh garlic cloves, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh oregano, chopped
- 2 teaspoons sea salt
- 1 teaspoon ground black pepper
- 2 pounds sirloin tips
- Couscous, pasta, salad, or rice, to serve
- In a large resealable plastic bag, combine the olive oil, wine, lemon juice, garlic, rosemary, oregano, salt and black pepper.
- Add the sirloin tips, seal, and shake or squish to make sure all of the ingredients are well dispersed. Place in the refrigerator for at least 8 hours or overnight. You may want to check in a few times to agitate the bag and make sure the sirloin tips are evenly marinated.
- Preheat your grill on high.
- Thread the sirloin tips onto 4 to 6 soaked skewers and grill for 4 to 5 minutes on each side.
- Serve over couscous, pasta, salad or rice.
