Avocado Heirloom Tomato Salad (Vegan, Gluten-Free, Soy-Free)

Serves: 2

Ingredients:

  • 1 avocado, pitted and cubed
  • 1 heirloom tomato, cubed
  • 1/4 cup  basil leaves, torn
  • 1 Tablespoon olive oil
  • 1 lime’s juice
  • Pinch celtic  sea salt and pepper, to taste

Directions:

In a mixing bowl, place all ingredients  and toss well.

Serving suggestion: enjoy with cabbage pieces cut into  ‘chips’, in a wrap, or on a flax cracker.
