Ani Phyo, the founder and executive chef of Smart Monkey Foods was kind enough to offer a few recipes. Many more are on the way as Ani is preparing an “UNcookbook”, which is slated for release in April 2007.
- 1 avocado, pitted and cubed
- 1 heirloom tomato, cubed
- 1/4 cup basil leaves, torn
- 1 Tablespoon olive oil
- 1 lime’s juice
- Pinch celtic sea salt and pepper, to taste
In a mixing bowl, place all ingredients and toss well.
Serving suggestion: enjoy with cabbage pieces cut into ‘chips’, in a wrap, or on a flax cracker.
