Creamy Quinoa Tomato Soup (Vegan, Gluten-Free, Nut-Free, Soy-Free)


Prepared by the wonderful people at Northern Quinoa Corporation, this soup uses their newest product, extra-fine quinoa powder. This is a great one for cool nights or hot summer days as there is no need to turn on the stove!

Quinoa Soup


Add to a food processor: 3 Tablespoons Quick Quinoa Powder (Extra-Fine) and 2 cups boiling water.  Pulse, then let it rest for two minutes.  Add 5 fresh Roma tomatoes and fresh baby basil.  Blend until smooth.  Top with a slice of tomato and sprig of basil if desired. For those who can use salt, add salt to taste. Enjoy!
