Like many, I follow an uncontrollable amount of blogs, most of the food persuasion. With so many wonderful posts to read, and incredible recipes to ponder, it seemed only natural that we should highlight a few of the “month’s best.” Since there were so many to choose from, we opted to go with the “bloggers’ bounty” theme, featuring those that made good use of fruits or vegetables from the garden. Peach season lasts but a few months a year, so it is essential to take full advantage of this fruit when perfectly ripe. The second I viewed Susan’s Peach Upside-Down Cake on Fat Free Vegan I knew that we had a clear winner for the bloggers’ bounty. A true gluten-free goddess gone allergy-free, Karina’s Kitchen cooks and bakes up a myriad of delicious food that is “safe” for many, but enjoyable for all. While we are constantly enticed by her recipes for cookies and desserts, the following colorful recipe for Grilled Vegetables over Dirty Rice was such an easy way to take advantage of numerous summer vegetables.
Really, choosing just one dish from Vegalicious is a mere feat in its own right. This beautiful array of simple vegan dishes, updated religiously, is treasure trove for any dairy-free or vegan consumer. However, when I spotted those organic plums on sale for $.99 a pound at my local natural food store, I knew that their German Plum Cake hit the season just right:
What would a bloggers’ bounty best of be without a good zucchini recipe. Tis the season for giant garden zucchinis and inexpensive in-season prices (for those of us without a green thumb). Of course, with so many zucchini recipes to choose from, no ordinary bread would do. We liked the unique twist of Michele’s Zucchini Bread with Basil and Golden Raisins over at Flora Fauna Fortuna. Using an abundance of both a summer vegetable and an herb, this versatile recipe can even be veganized with an egg replacer.
Sometimes simplicity can offer the best dishes of all, and over at Pig in the Kitchen, that is exactly what Rosemary’s Roasted Tomatoes offer. Requiring no more than fresh vegetables, herbs, and a drizzle of good olive oil, we couldn’t ask for a better representation of this month’s blogger’s bounty. Of course, the roasted garlic really put us over the top on votes for this one:
Alas, we are nearing the tail end of cherry season, but we really couldn’t overlook the Drunken Cherry Brownies over at Vegan Visitor. My chocolate cravings were satiated by one look at these voluptuous photos. Infused with homemade brandied cherries, this recipe could fall under the ultimate indulgence category:
