Once a month we’re featuring a family-friendly recipe from the Hatfields for our Kids Can Cook section. Their dairy-free teen cooking star is Katherine and this week she and her mama Sarah have two beloved recipes to share. Because their soft baked granola and granola bar recipes go hand in hand. Our family’s favorite granola recipe is an adaptation of Amy Dacyczyn’s granola recipe from The Tightwad Gazette. This quick and simple granola has a softer, more muesli-like feel than most granolas. Some of my children don’t care for granola that is “crunchy,” but this softer granola is a recipe they all…

Once a month we’re featuring a family-friendly recipe from the Hatfields for our Kids Can Cook section. Their dairy-free teen cooking star is Katherine and this week she and her mama Sarah are continuing with their savory pancake kick. These watercress dinner pancakes are a full meal deal, and a delicious way to get kids to eat their dairy-free greens and protein. Much like the Scallion Pancakes we recently featured, these Watercress Pancakes are a fun and easy way to get reluctant children to try an unusual vegetable. I don’t know if it’s the magic of the word “pancake” or the tastiness…

Once a month we’re featuring a family-friendly recipe from the Hatfields for our Kids Can Cook section. Their dairy-free teen cooking star is Katherine and this week she and her “mama”, Sarah, have a special summer dessert to share. This vegan Strawberry Shortbread Pie is bound to impress at backyard barbecues, potlucks, and independence day bashes. It’s strawberry season! Our town just had its annual strawberry festival, and locally-grown strawberries are for sale on many street corners and at u-pick farms. Local restaurants have beautiful strawberry pies on display in their pie cases, but unfortunately they are topped with whipped…

When Katherine and I were thinking about what to make for this month’s column, Alisa suggested a recipe that features vegetables. Somehow that suggestion led us to one of our favorite bread recipes! Not everyone thinks of bread when asked to write about vegetables, but these savory scallion pancakes or flatbread are the perfect way to highlight the green onions of spring. It is also a great way to introduce onions to children. Even the members of our family who don’t like onions love this bread. Chinese Scallion Pancakes, aka Pan-Fried Flatbread Loaded with Green Onions If you are a…

My family can decorate two dozen hard boiled eggs in about half an hour, so I’m always on the lookout for other fun activities to do over the break. The concept for these Easter rice crispy treats was shared with Go Dairy Free by Gina Clowes years ago, and I thought they would be fun to try. Chocolate-dipped foods, while delicious, can be messy to make–and eat! So rather than dip each entire treat into the chocolate, I decided to dip half of the eggs and just brush the nest tops with chocolate. This makes the cookies easier to handle while…

For Good Friday each year, my husband bakes dairy-free hot cross buns, a yeast-based Easter bread recipe. We’ve been known to enjoy them on Easter Saturday, too, as there’s often more time to bake on Saturday. Our children enjoy them with currants but not with raisins. Since we couldn’t find currants this year, we improvised and made this batch of dairy-free hot cross buns with Craisins (dried cranberries). They were a hit, especially with the orange zest in the dough. There is a superstition that says if you keep a hot cross bun baked on Good Friday it will not spoil…

Years ago, Gina Clowes of Allergy Moms shared some fun Easter treat ideas with Go Dairy Free. We decided it was time to feature her ideas again with some new photos. The first Easter treat to share is Easter Basket Cupcakes. You can use your favorite dairy-free cupcake and frosting recipe for these cupcakes. Here, I’m using Alisa’s Carrot Cupcakes with Dairy-Free Cream Cheese recipe from her upcoming cookbook! Carrot cupcakes just seemed appropriate for Easter, but feel free to use any dairy-free cupcake and frosting combination. If you’re short on time, you can even use store-bought safe cupcakes, such as Katz’s…

Once a month we’re featuring a new family-friendly dish from the Hatfields for our Kids Can Cook section. The dairy-free teen cooking star is Katherine and this week she and her “mama”, Sarah, are showing the little ones how to make classic Puppy Chow without dairy, gluten, and nuts!   Puppy Chow, or Muddy Buddies, is a popular kid treat that is simple to make, and simple to make dairy free and allergy friendly! Of course we used all dairy-free ingredients in this recipe, but I also included options to use gluten-free rice squares cereal (many brands are gluten free) and…

Once a month we’re featuring a new family-friendly dish from the Hatfields for our Kids Can Cook section. The dairy-free teen cooking star is Katherine and this week she and her “mama”, Sarah, are making Crockpot Peking Pork Chops with Vegetable Lo Mein. It’s a dinner that older kids and teens can make to give their parents the night off! When brainstorming for this month’s column, Alisa suggested we write about an easy entree kids can cook. Katherine thought of Crockpot Peking Pork Chops, which was the first main dish she ever made for our family. I can’t count how many times…

For this month’s Kids Can Cook feature, Katherine and her mom, Sarah, are helping us celebrate the kick-off of this year’s 21 Day Dairy-Free Challenge with So Delicious. Snacks and treats are key with any special diet, so they whipped up their favorite version of Chocolate Chip Cookie Dough Dip for you to enjoy.  A few years ago while on vacation, my sister served us a chocolate chip cookie dough dip with a surprise ingredient: chickpeas. None of us could believe it! Now, of course, bean-based desserts are all the rage both online and off. We even found chickpea-based fudgesicles for sale…

Once a month we’re featuring a new family-friendly dish from the Hatfields for our Kids Can Cook section. The dairy-free teen cooking star is Katherine and this week she and her “mama”, Sarah, are making Skillet Cookies. When I was growing up, our two closest neighbors were Italian widows. I always liked visiting their houses, but I especially enjoyed being in their kitchens at Christmastime. It was so much fun to see (and eat!) all the holiday treats they were making. I found the squid cooked in its own ink to be so exotic. I loved the fried smelts, the calamari, the pots…

The dairy-free teen cooking star is Katherine and this week she and her mama Sarah are making Frosted Pumpkin Bars with Dairy-Free Spiced Buttercream! Their recipe has been spiced up from a cooking icon favorite.  Years ago, before we knew how to make a dairy-free pumpkin pie, my mom saw Paula Deen make dairy-free pumpkin bars on the Food Network. My dad found the recipe online, and a family tradition was born. We have perfected many dairy-free holiday recipes since then, including pumpkin pie,…
