Once a month we’re featuring a new family-friendly dish for our Kids Can Cook section from the Hatfields. The dairy-free teen cooking star is Katherine and this week she is sharing dairy free pepperoni rolls – a tasty tradition in their town. Her mom, Sarah, has the pictures and details for us … Originally from West Virginia, pepperoni rolls are now a staple in Western Pennsylvania where we live, as well as in other nearby areas. They are often seen at parties (Super Bowl Sunday, anyone?), at pizza places, and are great to pack in school lunches. Years ago, before we baked dairy-free,…

Once a month we’re featuring a new family-friendly dish for our Kids Can Cook section from the Hatfields. The dairy-free teen cooking star is Katherine and this week she is sharing a fun and gift-worthy recipe for chocolate chip shortbread. Her mom, Sarah, has the pictures and details for us … This recipe for chocolate chip shortbread is our adaptation of Shuttemup Cookies from Peg Bracken’s The I Hate to Cook Book. We removed the nuts and made them dairy free. This is a great “first chocolate chip cookie” recipe because it’s so easy and because you don’t have to worry if…

When the cool weather sets in, so do the recipes using condensed “cream of” soups. There aren’t many dairy-free options n the market, but Vivian’s Live Again Soup & Sauce Mixes seek to fill the void. Their convenient packets (available in single-meal or bulk packages) house instant, powdered blends with simple “just add water” instructions. With a household full of kids, the ease of Vivian’s Live Again is hard to resist. Vivian’s Live Again Creamy Soup & Sauce Mixes are Instant Alternatives I really like that these mixes are easy to pack along, and I think they’re a great option…

Once a month we’re featuring a new family-friendly dish for our Kids Can Cook section from the Hatfields. The dairy-free teen cooking star is Katherine and this week she is sharing her favorite recipe for homemade rolls. Her mom, Sarah, has the pictures and details for us … Katherine and her dad bake these rustic homemade rolls almost every weekend and have done so for nearly seven years. They are an easy bread to reheat for weeknight dinners or toast for breakfast, plus they make cute sandwiches. It’s nice to have them on hand to give a pan to a friend or neighbor…

I’m not a fan of most April Fool’s Day jokes, but I can’t resist cute, edible food pranks to “fool” my children. Most of my ideas are from the pages of Family Fun magazine, a publication I can’t recommend enough if you have kids. Sunny Side Up Egg Food Prank Serve them this tasty breakfast and see how quickly they spot that the “egg” is made with dairy-free vanilla yogurt and an apricot half! To make this food prank, thoroughly stir the yogurt (for a smooth egg white) and carefully spread it in a circle on a plate. Then place a canned apricot half…

My quick 4-ingredient corn pudding recipe has been a dairy-free lifesaver at many family holidays. It’s easy to whip up in anyone’s kitchen just before the big Thanksgiving meal, so I don’t need to worry about preparation ahead of time. But the best thing about this delicious dairy-free side dish could be the leftovers. Thanks to my mom, we discovered that the chilled corn pudding makes amazing corn cakes for breakfast! My kids tend to get up hours earlier than anyone else, so an easy first breakfast like this one comes in handy when staying with family. In fact, the corn…

Though this may seem like summer fare, naturally dairy-free coleslaw carries over into the cooler months, when cruciferous vegetables like cabbage come into season. The key to my mom’s classic coleslaw is its simple, traditional dressing and finely shredding the cabbage with a knife. You can use a store-bought cabbage / coleslaw blend, but I do prefer the ones with fine shreds. Special Diet Notes & Options: Mom’s Classic Coleslaw By ingredients, this recipe is dairy-free / non-dairy, optionally egg-free, gluten-free, grain-free, nut-free, peanut-free, optionally vegan, and vegetarian. For soy-free and dairy-free classic coleslaw, choose your mayonnaise wisely. There are…

I was so inspired by the many great recipes in the Spring Fling Recipe Contest! Even though I couldn’t enter, I had to whip up a springy recipe of my own using my favorite spring vegetable: asparagus. And though this vegetable isn’t at its peak year round, the accompanying dairy-free Romesco dipping sauce is one that you can pair with roasted vegetables during any season. When cooking locally-grown asparagus (I can’t wait for our CSA deliveries to begin!) I usually briefly boil it for just a few minutes. Today I’m cooking asparagus that traveled a bit to reach its destination,…

My kids and I recently had the chance to try two Glee Gum Kits: Make Your Own Chewing Gum and Make Your Own Gummies. (Their Make Your Own Chocolate Kit contains milk.) These kits are a lot of fun and a great educational activity on rainy days (with a snack reward!), but they are best-suited for older children (recommended for ages 8+) to try with the assistance of an adult. Most of the steps were for children with some cooking experience and a knowledge of kitchen safety. I’ve included notes and photos from our experiments below! Glee Gum Kits have had…

Sunrise did discontinue their Super Squeezies Dairy-Free Pudding Tubes, and dairy-free squeeze tubes are hard to come by. But we do have a post on Dairy-Free Yogurt Tubes & Pouches and we have a section for Dairy-Free Pudding & Mousse Reviews. We recently had the chance to try Sunrise Super Squeezies by Sunrise Soya Foods. It is so exciting to have a dairy-free “pudding tube” substitute for lunchboxes, snacks, and desserts! But these are even better than the typical yogurt or pudding tube dessert because they are full of Omega 3-DHA and are gluten free, peanut free, and preservative free.…

I don’t know about you, but all of this snow makes me willing to do almost anything to avoid driving to the grocery store. Not to mention our heating bill is inspiring me to turn the thermostat down a few degrees and tighten up the grocery budget a bit. Come dinnertime, I’m looking for a warm, hearty, inexpensive meal I can make from the supplies in my cupboards and freezer. Enter my favorite tomato-based turkey vegetable soup recipe. In my corner of the internet, this turkey vegetable soup is known fondly as Swistle’s Soup, a creation of Swistle (real name,…

I like to make my own dairy-free onion soup mix for cost, convenience, and quality control. It works well in various recipes, from dips to entrée seasoning, but our favorite use is in Swistle’s Soup, otherwise known as Mom’s Best Turkey Vegetable Soup. This Dairy-Free Onion Soup Mix is Essential for Your Pantry There are some brands of dairy-free onion soup mix on the market, but there are also some, like Knorr, that contain milk. Rather than hunt around for small packets that fit our dietary needs, I like to make my own in bulk! The biggest wild card with dairy-free…

Looking for a last-minute Christmas gift? A way to entertain the children between now and Christmas Day, or between December 26 and whenever they go back to school? Maybe you’re planning ahead for winter birthdays? Do I have an easy recipe for you! My daughter and I found the inspiration for these Hot Chocolate Cubes in American Girl magazine and knew we had to come up with a dairy-free version. We’re still coming up with flavors! Besides the regular chocolate cubes, we made some with the white chocolate recipe from the Go Dairy Free Cookbook. I think the peanut butter chips…

When traveling over the river and through the woods to Grandmother’s house for Thanksgiving, it can be impractical to bake your dairy-free goodies ahead of time and nestle them by your feet in the sleigh. Or in the minivan or plane. Never mind getting them through security. I still remember the time the homemade cookies I made fused together into on large, lumpy cookie during a seven-hour car ride. Good times. This dairy-free corn pudding will save the holiday because it’s made from just four ingredients you can find in almost any store and can quickly whip up in anyone’s…

This is a caramel version of the chocolate pudding cake that uses boiling water to magically form a pudding layer on the bottom. Think of a gooey caramel layer instead of chocolate pudding on the bottom, and you’ve got the idea of this delicious, dairy-free apple pudding cake. Because the caramel layer is sweet, this apple pudding cake tastes best with tart apples, like Granny Smith. For an over-the-top treat, serve it warm and topped with a scoop (or two) of dairy-free ice cream. Alternately, you can let the cake cool, and present it as a special-occasion breakfast coffee cake. This was originally…

Today let’s enjoy an alfresco lunch of cucumber on whole wheat pita drizzled with an easy, creamy dairy-free yogurt curry sauce… This curry sauce recipe was a favorite of my aunt’s years ago, and I decided to bring it back using So Delicious Dairy-Free Yogurt. Parenthetically, are pitas out of fashion these days? Have they all been replaced by wraps and flatbread? I ask because I went on a bit of a search to find them, and my children were fascinated by the bread with a pocket in the middle. This simple dairy-free curry sauce is good as a veggie dip or…

Forget old-school lemon desserts – limes are the new “it” citrus. Embrace the trend and bake a batch of these amazing dairy-free lime bars! They’re so easy that kids can cook them, too. It is late spring in Western Pennsylvania, which means that it was ninety degrees yesterday and tomorrow’s field day at school will be rainy and in the sixties. That doesn’t mean we get the outerwear back out of the closet, though. Oh no. A few Sundays ago as we were entering church (28 degrees when I woke up) a woman who attended the early service burst out of the…

My family and I recently had the chance to try four Victoria Vegan sauces (they offer several more). Our favorite  was the Vegan Vodka Sauce. It is so flavorful and rich. It actually reminded us of the sauce often used for lamb meatballs on Indian restaurant buffets. The same level of complexity and richness of flavor, if not the exact seasonings. The Vegan Vodka Sauce could easily be used in a variety of recipes. We liked the cashew-based Alfredo okay but it wasn’t classic alfredo. My husband and I thought it would be especially good with some primavera-style vegetables. The…

On Memorial Day, our family usually gets together with our neighbors for a cookout where everyone brings their traditional offerings. It wouldn’t be a party without certain casseroles, coleslaws, salads, and desserts. Sometimes I like to mix things up, though and bring something new … like strawberry shortcake. A great dish, but not very portable or easy to eat at a picnic. But then it occurred to me – what if I ditch the shortcake and opt for frosted shortbread bars instead? These Strawberry Shortbread Bars combine the flavors of strawberry shortcake in easy-to-eat bar cookies. I couldn’t resist making things…

Although Tofutti Dairy-Free Ravioli has disappeared from the market, there are a few other options available. Two popular ones are Kite Hill Dairy-Free Ravioli & Tortellini and Rising Moon Dairy-Free Ravioli (they have a few varieties). Dairy-free ravioli is difficult to find and difficult to make. OK, any ravioli is difficult to make. But I am happy to announce that my ravioli-related problems have been solved with the new Tofutti Dairy-Free Cheese Ravioli – available in both jumbo and bite-size ravioli.
