OR, Portland – Little Bean Ice Cream: Turns Chickpeas into Milk & Cookies


Little Bean is a new ice cream shop opening in Portland, but they’re putting a twist on your typical ice cream… It’s made from chickpeas!

All of their ice cream is completely dairy-free, nut-free, and soy-free and made from organic non-GMO chickpeas. Little Bean is healthier for the planet and for you! Not only will there be a variety of scoop flavors, but they’ll also be offering waffle cones, cookies, and other sweet treats all made from the mighty chickpea!

A few of their innovative flavors include Chipotle Chocolate, Strawberry Sichuan, and Cherry Chai. Little Bean will be featuring their ice cream from a food cart, food truck, and a brick and mortar shop.

Why Chickpeas?

One of the founders, Micah Camden, said that nut milks didn’t freeze correctly, coconut milk’s flavor was hard to hide, and soy “will never escape the stigma of Monsanto.” In essence, he felt that soy was the best option for delicious results, but it’s met with too much public resistance.

So he turned to chickpeas, which are also high in protein and fiber for a creamy finish. Camden said, “anything they can do with soy, I can do with chickpeas.” And chickpeas are a low-impact crop that can naturally grow in drought conditions. Plus, they are gluten-free and top allergen free.

Little Bean turns the chickpeas into chickpea milk, and then uses the leftover chickpea pulp into a flour substitute that they use to bake their cookies. They will also serve lattes made with the chickpea milk.
