Pancho’s Vegan Tacos might be small, but the owner is dreaming big. This popular, plant-based Mexican restaurant has a physical location, a mobile food truck, a second location coming soon, and franchise opportunities available.

Their menu does have a good assortment of tacos, with soft street tacos, fried rolled tacos, full-size tacos, and a variety of fillings. But the humble restaurant name doesn’t do justice to their expansive selection of Mexican cuisine. They have Enchiladas, Chile Rellenos, Classic Burritos, Wet Burritos, Sopes, Tamales, Tortas, Nachos, Quesadillas, and really, I could go on. Breakfast is even available in the late morning hours.

For gluten-free diners, Pancho’s labels gluten-free options right on the menu. They also make it clear to mention your dietary needs when ordering. Some of their “meats” do contain wheat, but they have many gluten-free options, including chocolate cake for dessert!

The prices at this local eatery already seem quite affordable. However, they also have daily specials, like “Taco Tuesday” and “Nacho Wednesday.” Follow them on social media for the deal updates.
