Updated 2018! Pizza Research Institute is a strictly vegetarian pizzeria, and they do have quite a few vegan options. Cheese is abundant on their menu, but they also offer a “vegan base” option for all of their pizzas. The vegan base is their housemade seasoned marinara, spinach, and their own classic vegan cheese alternative. It’s baked on a naturally vegan crust. They also offer a gluten-free crust, but we are waiting to find out if it is dairy-free and vegan. Comment below if you know!

Like almost every pizza restaurant, build your own is an option. But their crafted combinations are pretty enticing. They have specials like “spicy baked tofu, roasted garlic, black olives” and “marinated portabella, shallots, arugula.” Or you can opt for the “chef’s choice,” with ten different vegetables, fruits, and vegan cheese toppings. And their topping selection is impressive. It includes artichoke hearts, walnuts, roasted zucchini, curried cauliflower, and so much more.

Beyond pizza, they have shiro miso cups and spirolls (housemade herbed rolls) on the vegan appetizer menu. And they have quite a few vegan salad options. For dressing or a drizzle, customers can choose PRI pesto, creamy vegan garlic sauce, sesame ginger vinaigrette, or balsamic vinaigrette.
