Sugar-Free Melon Popsicles

Serves: 4 melon popsicles
  • 3 cups chopped melon (honeydew, cantaloupe or watermelon)
  • 1 teaspoon lime juice or lemon juice
  1. Put the melon and lime or lemon juice in your blender and blend until very smooth.
  2. Divide mixture between ice pop molds or 4 paper cups, leaving a little room at the top for expansion.
  3. If using cups, place them in a baking dish for stability and insert a wooden stick in each cup.
  4. Freeze for 30 minutes, and if using paper cups, straighten the sticks if they have moved off center.
  5. Freeze for 1 more hour, or until solid.
