These tender baked granola bars are very versatile, and can be enjoyed with different mix-ins for a range of flavors.

  1. Preheat your oven to 350 F and line a 9x13-inch baking dish with parchment paper.
  2. In a large bowl, stir together the oats, flour, dried fruit, walnuts (if using), cinnamon, and salt.
  3. Put the sugar, flaxseed, honey, oil, applesauce, egg, and vanilla in a mixing bowl. Beat with a hand mixer until relatively smooth. Add the dry mixture and stir to combine.
  4. Scrape the dough into your prepared pan and evenly press it in with damp hands. It will be rather sticky, but water on your hands helps to prevent sticking.
  5. Bake 25 minutes, or until the edges are golden.
  6. Let cool completely in the pan. Remove the bars using the parchment paper and cut into bars.
