Vegan Baked Apples with Maple Spice Sauce

Unlike other recipes, these stuffed apples have a sweet, spiced sauce and use only maple syrup for added sweetness.

  1. Preheat your oven to 325ºF.
  2. Put the milk beverage, maple syrup, lemon juice, carob, vanilla, and cinnamon in a medium bowl, and whisk to combine.
  3. Pour the mixture into a 9x13-inch baking dish and add the whole cloves.
  4. Put the cored apples in the baking dish and stuff each with the raisins and nuts (if using).
  5. Sprinkle any remaining raisins or nuts around the bottom of the baking dish. Spoon some of the sauce over the apples.
  6. Cover the dish with aluminum foil and bake for 60 to 75 minutes, depending on the size of your apples.
  7. Serve warm or cooled with the sauce. Store leftovers in an airtight conotainer in the refrigerator for up to 2 days.
Notes
*For a fun and pretty presentation, you can slice the tops off the apples, fill the centers and return the tops for baking.
