This no rise, no knead recipe is ready in under an hour. The dough is a little less elastic and forgiving than traditional pizza dough, so it should be worked minimally and gently. But the end results rival the best pizzerias.

Ingredients
  • 1 cup unsweetened dairy-free milk beverage
  • 1 (.25-ounce) packet active dry yeast
  • 1 teaspoon sugar
  • 1 cup all-purpose flour, plus additional for working the dough
  • 1 cup whole wheat pastry flour or white-wheat flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup dairy-free buttery spread or sticks
  • ⅓ cup dairy-free pizza sauce, plus additional for serving
  • ½ teaspoon garlic powder
  • 3 ounces dairy-free mozzarella-style cheese alternative
Instructions
  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Measure the milk beverage into a glass measuring cup or bowl, and heat it for about 30 seconds in the microwave, until quite warm, but not too hot. Add the yeast and sugar, and let it sit while you whisk together the other ingredients.
  3. In a large bowl, whisk together the 1 cup all-purpose flour, whole wheat flour, baking powder, and salt. Whisk in the butter alternative until the mixture resembles fine crumbs.
  4. The milk mixture should be foamy or bubbly. If it isn't, you might have inactive yeast. Start over with a fresh yeast. If it is, pour it into the flour mixture and stir until a cohesive but rather moist dough forms.
  5. Turn the dough out onto a well-floured surface. Lightly flour your hands and pat the dough into a rectangle that’s roughly 13 x 8 inches. If the dough springs back too much, let it rest for 5 minutes, and then stretch it into shape. This is a loose dough, and might be a little sticky.
  6. Spread the pizza sauce over the dough, leaving a 1 centimeter edge without sauce on each side. Evenly sprinkle with the garlic powder, and then the cheese alternative.
  7. Gently roll the dough from a long side, moving with care and without stretching or pulling the dough. Once you have a nice log, cut 1 inch pieces with a sharp knife, using a sawing motion and as little downward pressure as possible.
  8. Transfer the rolls to your prepared baking sheet, a few inches apart so they have room to rise. Reshape them if necessary.
  9. Bake the pizza rolls for 13 to 17 minutes, until golden brown.
  10. Enjoy the rolls warm, served with a side of pizza sauce (or marinara) for dipping. Store leftovers in an airtight container at room temperature and reheat to serve.
