Pistachio Fig Bites
Serves: 4 servings, 4 slices each
  1. Remove 8 whole pistachios, halve them and set aside for garnishing.
  2. Finely chop 2 tablespoons of remaining pistachios in a food processor, remove from container.
  3. Combine remaining pistachios, figs and orange peel in the food processor. Process until the mixture forms into a ball, less than 1 minute.
  4. Shape the mixture into an 8-inch log, then roll it in the reserved chopped nuts. Chill until firm.
  5. Cut the log into 16 slices. Place halved pistachios in center of each.
No Food Processor? If you do not have a food processor, chop the figs and all but 8 pistachios together with large knife until fine. Mix in the grated orange peel then shape as above.
