Quick & Easy Apple Cinnamon Couscous

We love this fruit-sweetened couscous for breakfast, and often use whole wheat couscous.

  • 2 cups apple juice
  • ¼ cup diced dried apples
  • ¼ cup raisins
  • 2 teaspoons ground cinnamon, or to taste
  • Pinch salt
  • 1 cup dry couscous
  • ¼ cup sliced almonds, for garnish (optional)
  1. Put the apple juice, dried apple, raisins, cinnamon, and salt in a saucepan, and bring the liquid to a boil
  2. Stir in the couscous, cover, and remove it from the heat. Let stand for 5 minutes.
  3. Uncover, and fluff the couscous with a fork.
  4. Optionally top with sliced almonds.
