Chili Lime Shrimp Skewers

This flavorful shrimp is great as an appetizer or you can use it as the protein in a Mexican or Spanish inspired meal.

  • ¼ cup olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon ground cayenne pepper
  • Black pepper, to taste
  • ¾ to 1 pound large shrimp, peeled and deveined
  1. In a medium bowl, whisk together the olive oil, lime juice, salt, paprika, cayenne, and black pepper.
  2. Add the shrimp and stir to thoroughly coat. Let marinade for 15 to 30 minutes. Meanwhile, soak wooden skewers in water.
  3. Preheat your grill.
  4. Thread the shrimp onto the soaked skewers and cook on a hot grill until just cooked through, about 1 minute per side.
