Dairy-Free Tzatziki with Fresh Mint

Serves: 4 servings
  • 2 cups plain or unsweetened dairy-free yogurt
  • 2 cucumbers, diced small
  • 3 cloves garlic, minced
  • 3 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Dash salt and pepper
  • 1 tablespoon fresh chopped mint leaves
  • ¼ teaspoon paprika
  1. Whisk all ingredients together in a medium bowl until thoroughly combined.
  2. Chill for at least 1 hour before serving.
