Ingredients
2 cups plain or unsweetened dairy-free yogurt
2 cucumbers, diced small
3 cloves garlic, minced
3 tablespoon lemon juice
1 tablespoon olive oil
Dash salt and pepper
1 tablespoon fresh chopped mint leaves
¼ teaspoon paprika
Instructions
Whisk all ingredients together in a medium bowl until thoroughly combined.
Chill for at least 1 hour before serving.
